Ingredients Needed:
- 1-2 medium sized tomatoes (I use roma)
- 1 onion
- 16 oz of any ground meat (I tend to use turkey because it goes on sale a lot, but any works)
- 1 large bell pepper or a bunch of small bell peppers
- 1 Jalapeño
- 3/4 tablespoon chili powder
- 1 tablespoon garlic powder
- 1/2 tablespoon ground cumin
- salt
- ground black pepper
- oil (I use olive oil but any oil will work.)
- 2 tablespoons stock (chicken, beef, or veggie will work. It will just taste slightly different depending on what you use)
- 1 lime or 1 tablespoon lime juice
- any kind of tortilla (I like burrito size)
- lettuce or other leafy greens (optional)
- rice (optional)
I like to chop veggies and prep ingredients as I'm cooking. This recipe is written as I cook. If you prefer to prepare everything in advanced, you may do so.
1) Heat a pan over medium/high heat on a stove top with oil.
2) While this is heating, chop 3/4 of your onion into slices and dice the other 1/4 of your onion.
3) Slice your bell peppers into slices.
4) Once your pan is hot, put your sliced onions and your bell peppers into the pan for 7-8 minutes stirring occasionally.
5) While your onions and peppers are cooking, dice your Jalapeno and Tomato. Put the diced Jalapeno, Tomato, and Onion into a bowl. Squeeze 1/2 of a lime's juice into the bowl. Add salt and pepper to taste. Mix. Set aside. This is your Pico de Gallo
6) Once your peppers are done, put them into a bowl. Add a little more oil to your pan and let heat.
7) While the oil is heating, mix your garlic powder, chili powder, and ground cumin together.
8 ) Once heated put your ground meat into the pan. Add your seasoning mixture. for 3-5 minutes, mix and break apart the meat as it is cooking. Your goal is to have small pieces of meat that are cooked fully through. You know it's done when you are no longer seeing any uncooked meat.
9) Add in the stock. Let simmer for 1-2 minutes or until most of it has cooked off. Add in salt and pepper to taste.
10) Heat up your tortillas per the instructions on the package of tortilla. This varies depending on brand. You can also make tortillas by scratch.
11) Assemble your tortilla. Put your meat, peppers and onion, and Pico de Gallo onto your tortilla. If you would like, you can add rice, any topping, or leafy greens to this as well.
I love making fajitas or fajita like meals because they can be so diverse. If I want it a little spicier, I add more chili powder or use spicier peppers than bell peppers. It's also great because you can use whatever meat is cheapest that week if you're on a budget. The best part in my opinion is it takes less than 30 minutes to cook. I hope that y'all have enjoyed this recipe. If you don't have tortillas, you can even make it into a fajita bowl.
30 minutes if I don't do rice. But I've had a lot of practice in the kitchen. It would probably take longer if you did all the prep at the beginning instead of doing it as you go.
