The icon that you clicked with Link's shirt is the icon representing the costume subcategory. The reason you can't find the shirt is bc it's add on content you can get through the marketplace. For hair, the first 2 to 3 subcategories have a bunch of male hair, click through those. =) I should get my "How To" guide for saviis up soon, it seems like a lot of people are trouble with the subcats. If you have any other questions let me know. =)
